Super Bowl Sunday


 
Yup- I know this is slightly late, but not as late as my Christmas posts will be!

 

This year for super bowl Sunday I spent the day prepping food for the big game. No friends over, no party to go to just me, my husband, Patches and our new Sister. Yup- we got a second doggie. Patches didn’t know what to think at first – is she here to stay? Am I leaving? Do I have to share everything now? There was major jealousy issues in our household for a few weeks but things have settled down and now they get along pretty well. Sister is a sweet dog. She loves to play – always has a toy in her mouth – loves to cuddle – will find her way up on your lap somehow. She was a complete mess when we picked her out – correction – when my husband picked her out. She was lonely sitting in a kennel at an adoption event and no one was even looking at her. Maybe that is because she had long ratty hair, smelled really really bad, stained hair on her paws, missing teeth, and later we found out had worms and an ear infection. Who in the world would bring home a dog like that? My husband and I would and did. We do like the funny or ugly looking dogs more – at least the ones most people would say are ugly – we think they’re unique. Anyhow, Patches and Sister are getting along fine; sometimes they even play tug-o-war with toys. Patches still gets jealous when Sister sits on our laps but he was never one for being a lap dog so he’ll have to get used to it. Back to Super Bowl Sunday…It was going to be just the four of us but I still wanted to make some good eats.

So first I prepped the best dip I’ve ever eaten! Spinach Artichoke Dip with Blue Cheese and Bacon. I found the recipe on Better Homes and Gardens. I altered it slightly only because I forgot to buy some of the ingredients. http://www.bhg.com/recipe/appetizers-snacks/spinach-artichoke-dip-with-blue-cheese-and-bacon/ 

 
Ingredients:
  • 4-5 slices of bacon
  • half onion, diced
  • 2 14oz cans artichoke hearts
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 8 oz cream cheese
  • 4 oz blue cheese
  • 1/2 tsp dry mustard
  • and instead of garlic and red pepper (because I forgot to buy them) I used some ground red pepper and some garlic salt to taste 
  • (the wine is to drink while preparing all this good food, not for the dip)

Steps:

First, cook bacon, then drain but reserve some bacon grease

Second, chop onion and saute in bacon grease (about 1 tablespoon) until just tender 

Third, throw everything except the bacon in the crock pot until bubbly and warm and everything is nice and married together.

Right before serving add the bacon.


Yum! I served it on thinly sliced baguette that I toasted in the oven. This was soooo delicious! I will be making it again!
 

Second was a Meatball Taco Ring. I found this in a Taste of Home magazine I have. I changed up this recipe quite a bit – I used it more as a guideline than a recipe.

My Ingredients:
  • Schimek’s meatballs
  • Crescent rolls
  • Sour Cream
  • Taco Seasoning
  • Lettuce
  • Tomato
  • Onion
  • Green Pepper

Steps:

1. Microwave the meatballs and season with taco seasoning.

2. Open crescent rolls and do the best you can to make them into a circle with the points out like a sun – I wish they would have shown this in the magazine because I had to try about 4 times before I got something I could use - like this...


3. Then roll each meatball in the ends until they are just covered. Then bake according to the crescent roll package or until gold brown.

4. Mix some taco seasoning with sour cream and spread on the middle of the ring and then top with lettuce, tomatoes, peppers and onions – anything you like.

 

I cut it like a pizza to serve, I couldn’t figure out any other way to serve it or eat it. It was tasty – I would make it again but it was difficult to eat.


We also had chicken wings – just shake and bake, nothing fancy.

 
We were just about to go into a food coma and continue watching the game when we noticed Patches wasn’t in the house and wasn’t in the yard. We looked outside and there was a chain with no dog on the end. We grabbed some Beggin’ Strips, on went our shoes and out we went into the cold, dark neighborhood to try and find Patches. We first spotted him next door so he hadn’t gone too far but the second we tried to catch him he took off. We spent the entire second quarter of the game chasing Patches around houses – he stayed on our street thankfully but he is not good at coming home once loose. I think he peed on every pole and tree on our street. Finally he got tired and came closer and closer for the Beggin’ Strips and I caught him. I carried him home and we got inside and settled just in time for the power to go out in the stadium. Maybe Patches wanted us to get up and burn off some of what we had just eaten. I fell asleep and didn’t watch another minutes of the game. I was definitely in a food coma.
